Chicken is one of the most delicious and tasty main course meals in America. It now ranks third . Whether fried, baked, stewed,roasted or grilled, it is delicious and has a taste we all seem to enjoy, It is a great buy for homemaker’s and has nutritional values, rich in iron, protein, and niacin.Even dishes made from leftovers can become some of the most delicious meals eaten. Made from scratch dumplings are great.

1 cup flour

Dash of salt

1/2 tsp. baking powder

1/8 tsp. baking soda

2 Tbsp. shortening

1 egg, beaten

1/4 cup buttermilk

1 3- lb. chicken , cooking and pulled off the bone

1 bay leaf

1 small carrot

1 stalk celery

Pepper to taste ( white or black ) can be used

Sift flour,  salt, baking powder, baking soda together. Cut in shortening ; add egg and buttermilk. Mix until well blended. Turn out on a well- floured board; knead until smooth, adding more flour if needed. Roll out thin. Let stand for 2 to 3 hours to dry  .

Place chicken, bay leaf, carrot, and celery in Dutch oven or large pot; add water to cover, season with salt and pepper.  Cook, covered , for about 45 minutes over medium heat or until chicken is tender. Remove chicken to platter, pull skin off, remove chicken from bones. Pull or cut into small pieces. Keep warm. Strain broth; return broth to large pot. Bring to a boil. Cut dough into strips about 1- inch wide and 3 to 4 inches long. Add strips to gently boiling broth, pushing down dumplings as more strips are added. Cover; simmer about 20 minutes. Add 1/2 cup milk mixed with small amount flour to thicken broth , if desired.  Add cooked chicken to dumplings last few minutes of cooking ( Just an added note) Already made frozen dumplings are available now at your favorite food store.  This recipe will serve 8. Add your favorite salad and favorite dressing.  Carrots and peas are favorite vegetables for my family.
