Blue Ribbon Hot Chicken Salad                  Chicken is one of the homemaker’s best buys today for feeding our families. It can be prepared in a variety of ways and its delicious , mild flavor is one which most people never seem to get enough of. Chicken is rich in iron, protein, and niacin. Whether it is broiled , baked, fried, roasted, or used as a hot salad, the satisfying taste is there. Even dishes made from leftovers can be delicious meals ever eaten.

1/8 tsp. ginger

1/2 tsp. nutmeg

1/4 tsp.garlic powder

1/4 tsp. ground black pepper

1/3 cup white cooking wine

3 Tbsp. fresh lemon juice

6 skinned and boned chicken breasts

6 hard-cooked eggs, chopped

1/2 cup chopped onion

1/4 tsp. basil

1/4 tsp. rosemary

3/4 cup slivered almonds

2 cans cream of celery soup[

1 can cream chicken soup

1 1/2 cup mayonnaise

1 1/3 cup firmly crushed potato chops

Combine ginger, 1/4 tsp.nutmeg,garlic powder,pepper, wine and lemon juice. Place chicken breasts in lightly greased  baking pan; pour cooking wine mixture over chicken. Bake, covered, in preheated oven at 325 degrees until tender. Let chicken stand in pan juices. Chop coarsely. Add chopped eggs, onion, remaining nutmeg, basil, rosemary, almonds, soups, mayonnaise, and 2/3 cup potato chips; place in baking dish. Sprinkle remaining potato chips on top; Continue baking in 350 degree oven for 30 to 35 minutes.  This is a great  appetizer for a party or buffet.  Blue Ribbon Hot Chicken Salad is requested by my family . Can be served as a hot dip by leaving  out potato chips during baking. Chips or crackers can be placed on a platter when serving . Chicken  is suitable for almost every occasion and win compliments from everyone there.  In fact , there are so many different ways to cook chicken entire cookbooks are written on this subject alone.
