MOLASSES-COFFEE TURKEY BREAST Enjoy the luscious flavors of the holidays with this great southern version of a delicious meal which serves 6 to 8 guests. Roast the turkey with the skin on to lock in the flavors and keep the meat moist and tender. Basting throughout the cooking process also ensures the juiciness because it keeps the skin from from becoming dry and brittle. Remove the skin before serving.
1 (10 ounce) jar apricot spreadable fruit
1/4 cup strong brewed coffee
1/4 cup molasses
2 Tbsp. cider vinegar
1 Tbsp. Dijon mustard
1/2 tsp. kosher or sea salt
1 ( 5 -pound) bone-in turkey breast
Vegetable cooking spray
Stir together jar apricot spreadable fruit, strong brewed coffee, molasses, cider vinegar, Dijon mustard, and salt until blended. Reserve 1 cup coffee sauce in a microwave -safe small bowl; set aside.
Place turkey breast in an 11 x 7-inch baking dish coated with cooking spray. Pour remaining molasses-coffee sauce evenly over turkey. Cover loosely with aluminum foil.
Bake at 350 degrees for 1 hour; uncover and bake 1 to 1 1/2 more hours or until a meat thermometer inserted into the thickest portion registers 170 degrees, basting with molasses-coffee sauce every 15 minutes. Remove from oven, and let stand 15 minutes. Remove and discard skin before serving for an incredible low-fat and low-calorie dish. Serve with reserved 1 cup molasses-coffee sauce which can be heated in the microwave on HIGH for 30 seconds or until warm. Prep time: 15 minutes. Bake time: 2 hours , 30 minutes.
