Mushroom Artichoke Baked Pecan Chicken

Chicken is a hit with grown-ups as well as a young crowd.Chicken is the third most popular main course in this country. It is one of the best buys for homemaker’s today . It is served in a variety of ways. Chicken has a mild flavor, and  delicious taste that we all seem to enjoy.

1 1/2 cups finely chopped pecans , toasted

2 Tbsp fresh chopped parsley

1 1/2 tsp. salt

2 egg whites

6 skinned and boned chicken breasts

Combine toasted pecans, parsley and salt in a shallow bowl. Beat egg whites with a fork just enough to be foamy. Dip both sides of chicken breasts in egg;dredge in finely chopped pecans. Arrange chicken breasts on a lightly greased aluminum foil-lined baking sheet. Bake at 400 degrees for 20 to 25 minutes or until chicken is done.  Remove from pan and place in a large dish to which mushroom artichoke sauce can be poured over before serving.

Mushroom Artichoke Sauce:

2 Tbsp. butter

1 Tbsp. vegetable oil

1 (8-ounce) package sliced mushrooms

1/2 cup chopped onion ( about 1/2 small onion)

2 garlic cloves, minced

3/4 cup chicken broth

1 (8-ounce) package cream cheese, softened

1 (14-ounce) can artichoke hearts,  drained and coarsely chopped

2 Tbsp. fresh lemon or lime juice

1/8 to 1/4 tsp. ground red pepper

Melt butter with oil in a large skillet over medium heat; add mushrooms, onion, and garlic, saute 5 to 7 minutes or until tender. Stir in chicken broth and cream cheese, and cook, stirring constantly, 2 or 3 minutes or until cream cheese melts. Stir in artichoke hearts, lemon or lime juice, and red pepper. Reduce heat to low, and cook 2 more minutes or until mixture is hot. Makes about 2 1/2 cups. Prep time: 15 minutes, Cook time: 15 minutes

Mushroom Artichoke Baked Pecan Chicken  is very elegant and is delicious made with  fresh lemon or lime juice. Serves 6. Chicken breasts may also be cut into strips before sauce is poured over them. This recipe can be made according to your taste.  Artichoke hearts can be optional. Also cherry or grape tomatoes can be added as well. Save some fresh parsley for garnish before serving . En
