NANAS HOLIDAY FRUITCAKE

NANAS HOLIDAY FRUITCAKE

NANAS HOLIDAY FRUITCAKE           This is an old family favorite for many years. I think it has just the right mix of nuts and candied fruits. It is very elegant and delicious. This recipe can also be used to bake fruitcake cookies.  It will make about 5 dozen.  My family knows that the holiday season has begun for me because I enjoy making this great NANAS HOLIDAY FRUITCAKE  for my friends, neighbors and co-workers each year.

3 cups whole green and red candied cherries

3 cups candied pineapple, diced

16- ounces pecans, chops some in half, leave some whole

1 each 10-ounces golden raisins

1 cup shortening

1 cup sugar

4 eggs

3 Tbsp. vanilla extract

3 cups plain flour

3 tsp. baking powder

t tsp. salt

In a large bowl, combine the candied cherries, candied pineapple , raisins , and pecans; set aside. In another large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla extract. Combine the flour, baking powder and salt; add creamed mixture and mix well. Pour over fruit mixture and stir to coat evenly.

Transfer to a greased and floured  10-inch tube pan. Bake at 300 degrees for 2 hours or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Wrap tightly and store in a cool place.  Slice with a serrated knife; bring  to room temperature before serving. Yields : 16 servings Containers can be purchased also to store  NANAS HOLIDAY FRUITCAKE in that will be given away. Just a note:For making cookies, shape dough into 2- inch thick logs; wrap each one in plastic wrap very tightly. Refrigerate for 2 hours  or until firm. Cut logs into 1/4-inch slices. Place 2-inches apart  on ungreased baking sheet. Bake at 350 degrees for 12 to 15 minutes or until lightly browned. Remove to wire racks to cool. Yields: 5 dozen. Store in a covered container to retain freshness and flavor. Love the idea of holiday baking, but do not have a lot of time,  plan your menu, shop for all ingredients, and invite  a few friends to help with all the fun.
