This dessert has this name as it  has a citrus lift that is a perfect way to end a barbecue . You will  find it is very easy to make and is delicious. This is also made with a cake mix , which cuts down the preparation time, but not the elegant taste.  Their are many variations and versions of the PIG PICKIN’CAKE.  Prep: 15 min.

Bake: 30 min.  Chill : 4 hours                                                                                                                                    1  (18.25 ounce) package yellow cake mix

1/3 cup water

1/3 cup vegetable oil

3 large eggs

1 (11-ounce) can mandarin oranges, drained

1 (15-ounce) can crushed pineapple, undrained

1 ( 3.4-ounce) package vanilla instant pudding mix

1 ( 12-ounce) container frozen whipped topping, thawed

1/2 cup chopped pecans

Garnish with chopped pecans ( if desired)

Combine packaged yellow cake mix, water, vegetable oil, and eggs in a large bowl at medium speed with an electric mixer until blended. Stir in mandarin oranges. Pour batter into 3 greased and floured round cake pans.(layers will be thin).

Bake at 350 degrees for 25-30 minutes or until a wooden pick comes out clean. Cool layers in pans on wire rack for 10 minutes; remove layers from pans, and cool completely on wire racks.

Stir together crushed pineapple, instant pudding, thawed whipped topping, and pecans. Sp-read this frosting mixture  evenly between layers and on top of cake. Chill cake 4 hours . Add chopped pecan garnish , if desired. Store decorated cake  in refrigerator  till time to serve. Serves 12. After making and serving this cake at  a ladies club meeting several years ago , I was surprised to learn some other names this  PIG PICKIN’ CAKE goes by and each version is delicious. I had eaten  Sunshine Cake which put a smile on my cake eating face.
