What could be more satisfying than a food that is naturally low in fat and has a variety of ways to prepare. Freshness is imperative for Trout or any fresh fish you choose. Fish at time of purchase should be firm flesh and have a nice sheen. Next to freshness, proper cooking is most crucial to enjoying . Fish is cooked to develop its flavor, avoid overcooking. Overcooking trout or any fish will diminish  its delicate flavor. With your creativity, you can easily make Saucy Baked Trout With Mushrooms a favorite to enjoy.

1 1-lb fresh trout

1/4 cup butter

1/2 cup chopped onion

1/4 cup chopped green pepper

1 8-oz. can tomato sauce

1 2-oz. can sliced mushrooms drained or 1 cup fresh sliced mushrooms

2 Tbsp. lemon juice

1 Tbsp. vinegar

1 tsp. sugar

1/2 tsp. fresh thyme leaves , chopped

1/8 tsp. pepper

Dash salt is optional

Fresh lemon wedges for garnish

Purchase fresh trout at local market. Begin by patting dry with absorbent paper towels. Melt butter in 2-quart sauce pan; saute onion and green pepper until tender. Add tomato sauce, mushrooms, lemon juice, vinegar, sugar, thyme,and pepper; heat to simmering. Place Saucy Trout With Mushrooms in a 2-quart buttered shallow baking dish; pour sauce mixture over trout. Bake in preheated 350-degree oven for 20 t0 30 minutes or until fish flakes easily with fork. Garnish with lemon wedges before serving . Serves 2. This recipe can easily be used  with whatever type fish you prefer. Serve  with your favorite salad and dressing , steamed vegetable medley, cheese grits, and fresh fruit for dessert. (Just a thought: As a homemaker on a budget and wanting to prepare meals packed with nutrition for my family, I have acquired a taste for different varieties of fish, fresh or frozen , as it is often a better buy than meats.)
