SMOKED SAUSAGE AND CHICKEN GUMBO

SMOKED SAUSAGE AND CHICKEN GUMBO .  Southern cooking is synonymous with  southern hospitality.Creole cooking is  complex,  rich and deliciously flavorful with a  blend of spices ,gumbo files , soups and stews. SMOKED SAUSAGE AND CHICKEN GUMBO  is also referred to as Camp Stew. American cooking could never to be referred to as dull and boring , because it has so many ways to prepare food and so many  millions of brilliant cooks.

3 lbs. of stewed chicken

1 lb. of smoked sausage (beef or pork)

1 cup oil

1 1/2 cups flour

2 cups diced celery

2 cups diced onions

1 cup diced bell peppers, any color or variety

1/4 cup minced garlic

3 quarts of chicken stock

1 lb. button mushrooms

1 cup diced green onions

1 bay leaf

1 sprig of fresh thyme

2 tbsp. fresh basil, chopped

Salt and fresh ground black or white pepper to taste

Hot sauce to taste ( Tabesco , Cajun Chef, which ever you prefer)

1/2 cup chopped parsley , for garnish

4 cups cooked steamed rice

Prep:

Boil chicken ( 1 to 2 hours before cooking gumbo), reserve stock

Remove  chicken from bone , discarding bones, cutting  chicken into small pieces , reserving chicken  and stock for use in gumbo. Cut smoked sausage into 1/2- inch slices, set aside.

In a 2-gallon stock pot, heat oil over medium-high heat. Whisk in flour, stirring constantly until a golden brown roux is achieved. Stir in onions, celery,bell pepper , and minced garlic. Saute 3 to 5 minutes or until vegetables are wilted.

Blend chicken pieces and sausage slices into vegetable mixture, about 15 minutes. Add chicken stock , on ladle full at a time, stirring constantly. Bring to a rolling boil,  then reduce to a simmer and cook about 1 hour more. Skim any oil or fat that comes to the top.

Stir in mushrooms, green onions, bay leaf, thyme, and basil. Season with salt, pepper , and hot sauce. Cook additional time, if necessary , until chicken is tender and falling apart. Stir in parsley, just before serving SMOKED SAUSAGE AND CHICKEN GUMBO.  Serve over steamed rice.  Add baked rolls, cornbread sticks, or crackers. Serves  8- 10 guests .Enjoy
