Zucchini is a vegetable  and is very elegant and very delicious when made into a dessert. The bundt pan just makes it easier to slice the cake .

Zucchini is a vegetable  and is very elegant and very delicious when made into a dessert. The bundt pan just makes it easier to slice the cake . The frosting is a sugar glaze that is thin and easy to drizzle over the cake.Makes 12 slices easily. My favorite food is dessert, any kind will do. I really like making bundt cakes as they are easier to slice, can be prepared in advance , can be served with or without frosting. Zucchini Spice Bundt Cake can be made with a packaged mix

1 package (about 15 ounces) spice or carrot cake mix

1 cup water

3 eggs

2 Tbsp. vegetable or canola oil

1 medium zucchini , peeled and shredded

1/4 cup chopped walnuts, toasted  (method of toasting follows)

3/4 tsp. vanilla

Powdered sugar glaze (optional)

To toast walnuts, spread in a single layer on baking sheet. Bake at 350 degrees oven 5 to 7 minutes, till golden brown, stirring frequently. The flavor of nuts is improved if they are toasted.

Preheat oven to 325 degrees; spray 12 -cup ( 10-inch ) bundt pan with nonstick cooking spray.

Combine cake mix, water, eggs and oil in a large bowl; beat 2 minutes or until well blended. Stir  in shredded zucchini, toasted walnuts, and vanilla until blended. Pour into prepared pan. Bake 40 minutes or until a toothpick inserted near the center comes out almost clean. Cool in pan for about 10 minutes; invert onto a wire rack to cool completely.

Prepare the Powdered sugar glaze, if desired. Drizzle over cake ; let stand until set.

Powdered sugar glaze: Combine 1/4 cup powdered sugar and 1 to 2 teaspoons milk in small bowl; whisk until smooth.

Zucchini Spice Bundt Cake can be prepared in advance; it freezes very well. After frozen , wrap in clear wrap. Before serving , drizzle sugar glaze over cake.  ( Just a tip: Always cut a cake from the center, then you can slide  the remaining sides together, if any is left.) This makes a great gift giving dessert with the recipe enclosed on a decorative recipe card. This light moist cake is one of my top picks , it is delightful and special enough for any occasion.
