Almond Orange Carob Cake

Almond Orange Carob Cake                           
Carob is similar in taste and color to chocolate, but is far lower in fat and higher in fiber. This is a great dessert with or without frosting.It has added taste with the ground almonds. Over the years I have been asked to prepare this delicious cake for my quarterly club meeting. Fresh navel oranges add a unique flavor as well.

3/4 cup ground almonds

3/4 cup  whole wheat pastry flour

1/3 cup carob powder

1 tsp. baking soda

1/4 tsp. ground cinnamon

1 tsp. vanilla extract

1/2 cup honey

3 eggs

2 egg whites

Place navel oranges in a large sauce pan filled with water. Bring to a boil, cover, reduce heat and simmer for 30 minutes. Drain and cool.

Sift the ground almonds, setting aside the coarser granules for another dish. In a large bowl, combine sifted almonds with the whole wheat pastry flour, carob powder, baking soda, and ground cinnamon.

Coarsely chop the oranges but do not peel. Place half the oranges pieces in a blender with the vanilla extract, almond extract, and the honey. Process on low speed until smooth. Add to the dry ingredients already in large bowl.

In a blender, process the remaining orange pieces with the eggs and egg whites on medium speed, blend until smooth. Add to mixture in large bowl. Stir until well combined. Place the batter into 2 -8 inch pans that have been lightly oiled and floured. Bake at 325 degrees for 1 hour. Remove from pans and cool. (Batter can also be placed in a lightly oiled and floured springform pan. Bake at 375 degrees for 1 hour. Remove the rim from the pan and cool.)

Basic Cream Cheese Frosting:

1 8 oz. pkg. cream cheese, softened

1 tsp. vanilla extract

1 box confectioners sugar

In a mixing bowl, cream together cream cheese, butter, and vanilla until mixture is creamy. (Reserve about 1/2 cup of the frosting  to put between the layers.) Cocoa powder can be added to frosting if desired . Food coloring can be added to frosting, if desired . Frost cooled Almond Orange Carob Cake.        Makes 12 to 16 servings.   Enjoy.
