FIESTA EASY CHICKEN CASSEROLE

In this modern age of  fast food restaurants and TV dinners, the emphasis on cooking  seems to be the quicker the better. Quality , nutritional, and delicious meals , do not have to be time consuming. Some meals that get the most compliments from  family and guests are won by dishes that are tasty, and are not difficult to prepare, but really require little effort from the homemaker. Have you ever caught yourself wishing dinner would instantly appear on the table?  Over the years, i sure have. Over the years, technology has developed more appliances, food products are readily available at the stores where we shop. Nutrition is still important , but with a minimum amount of time as homemakers, we can spent less time in the kitchen, and more time with family . I love casseroles, one meal dishes that are so easy  to prepare. FIESTA EASY CHICKEN CASSEROLE is a great family favorite for me.

Prep time: 15 minutes  Bake time:40 minutes  Makes 8 (about 1 1/2 cup each)

1 jar (16 oz) Picante sauce

1 can ( 10.5 oz ) condensed cream of chicken soup

1 cup sour cream

2 cups shredded cheddar cheese (about 8 0z )

2 pkgs. ( 12 oz. each ) frozen whole kernel corn

2 cans (12.5 oz ) premium white chunk chicken breast in water, drained

1 can ( 15 0z )black beans, rinsed and drained

1 pkg. (2 crusts, about 14 oz) refrigerated pie crusts, at room temperature

Heat oven to 400 degrees F.

Stir the picante sauce, soup, sour cream, shredded cheese, corn, chicken and  black beans in a large bowl. Spoon the chicken mixture into a 3-quart shallow baking dish.

Unfold  the pie crusts on a lightly floured surface. Lay the crusts side-by-side so that they overlap by about 3 inches in the center. Press the seam to seal. Roll the pie crust into a 14 x 10-inch rectangle. Place the crusts over the chicken mixture. Trim the excess crust. Press the crust to the rim to seal. Cut several slits in the crust, to prevent air bubbles. Bake 40 minutes or till golden brown. This is a great one meal dish to serve with your favorite trimmings to complete your  meal.
