Peanutty Braised Chicken

Peanut butter gives this dish exotic flavor and creates a velvety sauce when combined with tomatoes. It is served over rice and pile on the toppings: green onions, cilantro and lots of crunchy peanuts. Chicken is always a favorite at my house. Chicken in itself has a rather bland taste,it is very easy to adjust seasonings according to your own preferences after you have made a dish.

1 cup creamy peanut butter

1 1/2 cups chicken broth, warmed

2 lbs. skinned and boned chicken breasts, cut into pieces

1 1/4 tsp. kosher salt, divided

2 Tbsp. vegetable oil

1 medium onion, chopped

1 red or yellow pepper, chopped

3 garlic cloves, finely chopped

1 ( 14 .5 -oz) can diced tomatoes, undrained

Hot cooked rice

Toppings: sliced green onions, fresh cilantro leaves, chopped peanuts

Place peanut butter in a medium bowl, gradually whisk in warm chicken broth until blended.

Cut chicken in desired pieces, pat dry dry with paper towels; sprinkle with 1 teaspoon salt, and toss well. Heat oil in a 4 to 6 quart heavy ovenproof dutch oven over medium-high heat. Brown chicken pieces, in batches, in the hot oil, 3 to 5 minutes. Transfer to a bowl.

Add onion and bell pepper to Dutch oven; saute for 4 minutes or until onions begin to brown. Add garlic cloves ; saute 1 minute more. Stir in chicken along with any accumulated juices, peanut butter mixture, tomatoes, and remaining 1/4 tsp. salt. Bring to simmer, reduce heat to low, and simmer 10 minutes or until desired degree of doneness. Serve  Peanutty Braised Chicken over your favorite rice. Sprinkle with decorative topping.  This recipe serves 6 and prep and cooking time is about 1 hour.  I like to use boil-in-a-bag white rice or brown rice.  Your favorite salad goes well with this chicken dish. Fresh steamed carrots and green peas are  favorites to serve as well . Fresh fruit for dessert and freshly brewed sweet tea. Invite some friends over and enjoy serving Peanutty Braised Chicken. Suitable for any occasion, chicken can be served at a picnic, luncheon or dinner party. Whether it is baked, fried, roasted the same delicious and satisfying taste is there.
