SEAFOOD AND CORN CHOWDER

SEAFOOD AND CORN CHOWDER is historically a peasant food prepared in a large pot or cauldron. The ingredients for chowder includes vegetables , and often fish or seafood, depending on the area you live in. You can make this dish with or mussels, different types of fish, scallops or shrimp. It is a simple but sweet soup that gets its flavor from fresh ingredients. Sweet corn and shrimp are my favorite ingredients in this recipe.
6 bacon slices
2 celery ribs, diced
1 medium-size green bell pepper, diced
1 medium onion, diced
1 jalapeno pepper, seeded and diced (optional)
1 (32 ounce ) container chicken broth
3 tbsps. all-purpose flour
3 cups fresh sweet corn kernels
1 pound fresh peeled cooked small to medium shrimp
1 cup whipping cream
1/4 cup fresh cilantro, chopped
1/2 tsp. kosher salt
1/4 tsp. fresh ground black pepper
Oyster crackers when serving

Cook the bacon slices in a Dutch oven over medium heat for 8 to 10 minutes or until crisp; remove the bacon, drain on paper towels, reserving 2 Tbsp. drippings in Dutch oven. Crumble the bacon.
Saute the celery ,bell pepper, and onion in hot drippings 5 to 6 minutes or until tender.
Whisk together the chicken broth and flour until smooth. Add to the celery mixture. Stir in the sweet corn. Bring to a boil; reduce heat , and simmer, stirring occasionally, about 30 minutes. Gently stir in the fresh peeled cooked shrimp and whipping cream, chopped cilantro, salt and pepper; cook 6 to 8 minutes or until thoroughly heated. Serve warm with oyster crackers and crumbled bacon. Garnish with fresh cilantro (optional) . Cooked chopped chicken may also be substituted if you do not enjoy fish or seafood. My family also likes this recipe with fresh vegetables with the simple rich cream soup extraordinary flavor. Serve with a salad, loaf of bakery bread, and fruit to finish meal. Enjoy!
