Texas Style Enchilada Casserole

Serve something with a little kick this season. This recipe will bring a welcome change from the standard fare. Relatively inexpensive , comparing price per pound per cost per serving . Ground beef is just what the budget-conscious homemaker needs to stay on a budget. Ground beef is versatile, economical, nutritious and satisfying..Ground beef is one of the easiest meals to prepare, and the taste seems to please people of all ages.

1 pound ground chuck

1/2 medium-size red onion, chopped

1 (4 ounce) can diced green chilies

12 (6-inch) corn tortillas, cut into 1-inch pieces

1 (103/4-ounce) can cream of mushroom soup

1(2 1/4 ounce) can  sliced ripe black olives

1 cup mild enchilada sauce

1/2 cup sour cream

1 (8-ounce) block sharp Cheddar cheese, shredded and divided

Toppings: shredded lettuce, diced tomatoes, finely chopped red onion

Cook ground chuck, chopped red onion, and diced green chilies in a large skillet over medium-high heat, stirring until meat crumbles and is no longer pink. Drain well.

Place beef mixture in a large bowl. Stir in tortilla pieces, soup, black olives, mild enchilada sauce, sour cream, and 1 cup shredded cheese; spoon mixture into a lightly greased 11- x 7-inch baking dish. Sprinkle evenly with remaining  shredded cheese.

Bake at 400 degrees for 20 to 25 minutes or until bubbly. Serve casserole with desired toppings. Include sour cream for individual servings .  Serve buffet style as an appetizer  as guests arrive.  Texas-Style Enchilada Casserole is a great  way to start any party or meal. Serves 8. Prep: 10 minutes. Cook: 6 minutes.    Bake: 25 minutes.

This is a perfect dish for casual entertaining and very easy to double recipe by increasing the ground chuck and increasing amount of soup and cheese. Bake in a larger  dish and cooking a few minutes longer.  Also have additional  baked chips and more salsa. Plan ahead so you can enjoy your guests.  When football season starts, plan an easy menu that can be prepared ahead. Have bucket of ice and plenty of bottled water and tea.  Enjoy!
